Fry them, boil them, put them in a stew...potaros are a staple of the habapi diet. Their flesh turns curiously purple when exposed to air for too long, which only makes them more fun to eat! They're soft enough that anyone can eat them once they're cooked. Some delicacies include a cold dessert soup with palmnut milk and tapi tuber dumplings, potaros buried under a whole pile of dried leaves for baking (so warm and toasty!), and the almighty mash, conqueror of tummies everywhere.
