Water root grows in the water, but it looks like a boring tube until it's cut and you can see the adorable hearts inside! Raw, their taste is rather neutral, so they're best enjoyed thinly sliced for a firm, fresh crunch, or as a garnish. They bring out their true strength in a stew, or when stir-fried. Sauces and soups cling to them, and they make everything seem that much more umami!
